In 2001, Rodriguez saw an opportunity to expand again. It was time for Guadalajara Mexican Bar & Grill located on the corner of Shore Drive and Great Neck Rd. It was here that the authentic taco bar, "Fat Tuesday" drink machines and live music after 9:00 p.m. were introduced.
