In November 2003, Guadalajara Tropical Café opened on General Booth Blvd. in the Strawbridge Shopping Center of Virginia Beach. Inspired by Rodriguez's travels to South Beach, Florida and the Caribbean Islands, Guadalajara Tropical Café is unlike any restaurant in Virginia Beach. A casual South Beach atmosphere awaits as you walk through the door. The entrance opens into a lounge complete with salt-water fish tanks, fountains, waterfalls, and of course, palm trees! The restaurant is bursting with color from the wide array of greenery to the mosaic-tiled bar, "Fat Tuesday" drink machines and neon-lighted glass booths.
